Cooking whole chickens or chicken parts in a RATIONAL Combi Oven gives consistent, juicy, and perfectly browned results with minimal effort. Whether you’re running a commercial kitchen or perfecting your Sunday roast, this guide walks you through it step-by-step.


🧰 What You’ll Need

  • 1 whole chicken (1.2–1.8 kg)

  • Salt, pepper, herbs (e.g., thyme, rosemary)

  • Olive oil or butter

  • Optional: lemon, garlic, paprika, marinade

  • RATIONAL Combi Oven (e.g., iCombi Pro or Classic)

  • RATIONAL core temperature probe (recommended)

  • Roasting tray or combi grid


🔧 RATIONAL Combi Oven Setup

Use the Combi-Roast Mode or manual settings if preferred.

🔥 Recommended Settings:

  • Cooking Mode: Combi (steam + convection)

  • Temperature: 160–170°C (preheat to 170°C)

  • Humidity: 30–40%

  • Fan speed: Low or auto (for whole birds)

  • Core Temp Probe Target: 75°C (safe for poultry)


🥣 Preparation Steps

  1. Season the Chicken
    Pat dry the chicken skin. Rub inside and out with salt, pepper, olive oil, and your choice of herbs. For extra flavor, stuff the cavity with lemon and garlic.

  2. Truss (Optional)
    Tie the legs with butcher’s twine for even cooking and presentation.

  3. Insert Core Probe
    Insert the RATIONAL temperature probe into the thickest part of the chicken thigh (not touching bone).


🍽 Cooking Process in RATIONAL

Option 1: Use the iCookingControl® / Auto Mode

  • Choose: Poultry > Whole Chicken > Desired Browning Level. See more options with tandoori ovens.

  • Follow prompts – the oven adjusts temperature, humidity, and time automatically

  • Auto-stop when the core temperature hits 75°C
